 Ginger Chicken Stir-Fry

Ingredients:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 onion, thinly sliced
1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Cooked rice, for serving
  • Sesame seeds and sliced green onions, for garnish (optional)

Instructions:

  1. In a small bowl, mix together soy sauce, rice vinegar, honey, and sesame oil to create the sauce. Set aside.

  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant.

  3. Add sliced chicken breasts to the skillet. Cook for 5-6 minutes until chicken is no longer pink and starts to brown.

  4. Add sliced onion, bell pepper, and broccoli florets to the skillet. Stir-fry for an additional 3-4 minutes until vegetables are tender-crisp.

  5. Pour the sauce over the chicken and vegetables in the skillet. Stir well to coat everything evenly. Cook for another 1-2 minutes until the sauce thickens slightly.

  6. Season with salt and pepper to taste.

  7. Remove from heat and serve the Ginger Chicken Stir-Fry hot over cooked rice.

  8. Garnish with sesame seeds and sliced green onions, if desired.
