Ginger Chicken Stir-Fry
Ingredients:
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 onion, thinly sliced
- 1 cup broccoli florets
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- Cooked rice, for serving
- Sesame seeds and sliced green onions, for garnish (optional)
Instructions:
In a small bowl, mix together soy sauce, rice vinegar, honey, and sesame oil to create the sauce. Set aside.
In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant.
Add sliced chicken breasts to the skillet. Cook for 5-6 minutes until chicken is no longer pink and starts to brown.
Add sliced onion, bell pepper, and broccoli florets to the skillet. Stir-fry for an additional 3-4 minutes until vegetables are tender-crisp.
Pour the sauce over the chicken and vegetables in the skillet. Stir well to coat everything evenly. Cook for another 1-2 minutes until the sauce thickens slightly.
Season with salt and pepper to taste.
Remove from heat and serve the Ginger Chicken Stir-Fry hot over cooked rice.
Garnish with sesame seeds and sliced green onions, if desired.
